Here's the recipe for anyone interested:
Ingredients: (Makes enough for 2 people)
125g plain flour
Large pinch each of baking soda, baking powder, salt
1tbsp sugar
15g butter melted
240ml buttermilk
1 egg
Butter/cooking spray for cooking
Berries + whipped cream for topping
Method:
Mix the dry ingredients together (flour, baking powder, soda, salt, sugar). Whisk the wet ingredients together (butter, buttermilk, egg). Now fold the liquid into the dry mix. Use a spatula to combine, whisk slowly as you don’t want to over-mix. When just incorporated you can start frying them.
Add a few sprays of cooking spray to a non-stick pan over medium heat. Add some of the batter and fry until you can see the edges slightly change colour, then flip.
Top with your desired toppings!
